Rich Syllabub


  • 2 large lemons
  • 2 wineglasses sherry
  • 1 wineglass brandy
  • 1 pint double cream
  • 6 oz. sugar


Grate the zest from the lemons and squeeze the juice. Stir the sugar into the juice until melted, add lemon zest, sherry and brandy. Add the cream, a little at a time, whipping steadily until very thick and foamy.
