Orange Syllabub

Ingredients

  • 2 small oranges or 1 large orange
  • 1 tablespoon lemon juice
  • 3 oz. caster sugar
  • ½ pint double cream

Method

Grate the rind from one of the oranges (or half the orange if using 1 large one) very finely. Mix into strained juice of other orange and the lemon juice. Add the sugar and stir until well dissolved. Add the cream and whisk until the mixture thickens. Serve in individual glasses or large glass bowl, chilled.
