Milk Punch


  • 6 eggs
  • ½ pint madeira or sweet sherry
  • 6 oz. caster sugar
  • 1 pint milk
  • grated nutmeg to taste


Beat the eggs until very pale and foamy, add the sugar and wine, put in a double boiler over boiling water and continue beating until the mixture holds the trail of the whisk. Flavour the milk to taste with nutmeg, bring it to the boil, and pour it from a height into the egg mixture to make it very foamy.
