Blackberry Cheese


  • 2 lb. blackberries
  • 1 lb. cooking apples (unpeeled)
  • ¼ pint water
  • 1 lb. sugar to each lb. pulp


Wash the fruit and chop apples roughly. Simmer in water until soft. Rub through a fine sieve and weigh the pulp. Return to pan with the sugar. Dissolve sugar carefully, then bring to the boil and boil gently until a semi-solid consistency is reached. Pour into prepared jars.
