Blackcurrant Gin (cassis)


  • ½ lb. blackcurrants
  • 1 bottle gin
  • sugar


Crush the blackcurrants and put with gin in screw-top jars. Secure lids and leave for about 2 months. Strain, and add 6 oz. sugar to each pint of liquid. Put in a jug, cover and leave for 2 days, stirring to dissolve sugar. Strain through fine muslin and bottle. Store for 6 months.
