  • 2 lb. plain flour
  • tablespoons baking powder
  • ½ teaspoon salt
  • 2 oz. butter
  • about pints milk

Method

Sieve together the flour, salt and baking powder. Rub in the butter. Add enough milk to give a soft dough. Divide mixture into two and form into rounds about 1 inch thick and place on a greased baking tray. Bake in a hot oven 425°F., Gas Mark 7, for about 25 minutes or until bread sounds hollow when lightly tapped.

Variation

A similar type of bread without yeast can be made by substituting 1 tablespoon bicarbonate of soda for the baking powder, reducing butter to 1½ oz. and milk to 1 pint. Shape and bake as above or divide into four and bake on a floured griddle for about 12–15 minutes on each side. The bread sounds hollow when tapped.
