Yorkshire Scones


  • 8 oz. plain flour
  • ¼ teaspoon bicarbonate of soda
  • ½ teaspoon cream of tartar
  • ¼ teaspoon salt
  • 3 oz. butter
  • 3 oz. caster sugar
  • 2 oz. sultanas
  • ½ oz. chopped mixed candied peel
  • 1 egg
  • milk


Sieve together the flour, bicarbonate of soda, cream of tartar and salt. Rub in the butter until mixture resembles fine breadcrumbs, then add sugar, sultanas and peel. Beat egg and add to the mixture with enough milk to make a soft dough. Roll out to a round about ½ inch thick on a floured working surface and mark into 8 segments. Put on to a greased and floured baking tray and bake in a moderately hot oven, 400°F., Gas Mark 6, for about 20 minutes or until golden brown.
