Barm Brack


  • ¾ pint well strained cold tea
  • 7 oz. soft brown sugar
  • 12 oz. mixed dried fruit
  • 10 oz. self-raising flour
  • 1 egg


Put the tea, sugar and dried fruit into a bowl, cover and leave overnight. Sieve the flour and add the beaten egg and fruit mixture. Mix well. Turn into a greased and lined 8 inch round cake tin or 2 lb. loaf tin and bake in a moderate oven, 350°F., Gas Mark 4, for about 13/4 hours. Turn out and cool on a wire rack.
