Burnt Hazel-Nut Toffee

  • hazel nuts (see recipe)
  • 8 oz. brown sugar
  • 2 oz. butter
  • 2 tablespoons golden syrup
  • tablespoons water
  • 2 teaspoons vinegar


Blanch the hazel nuts, dry them and brown in the oven. Boil together the sugar, butter, golden syrup, water and vinegar—allow to boil for 12 minutes. Stir in as many nuts as the toffee will take and hold together. Pour into a buttered tin and allow to cool.
