  • 2 lb. granulated sugar
  • ¾ pint water

Method

Put sugar and water into a pan with a heavy base, heat gently until sugar is dissolved. Add the glucose and boil to 240°F., or until mixture forms a soft ball when you drop a little into cold water. Allow to cool off the heat, without stirring, until it begins to thicken. Turn out on to a damp marble slab and when it is cool enough to handle work in the cochineal; keep turning into the centre w
