  • 2 lb. granulated sugar
  • ¾ pint water
  • 3 oz. glucose
  • few drops cochineal
  • 1 teaspoon cocoa powder
  • 1 yard clean white string


Put sugar and water into a pan with a heavy base, heat gently until sugar is dissolved. Add the glucose and boil to 240°F., or until mixture forms a soft ball when you drop a little into cold water. Allow to cool off the heat, without stirring, until it begins to thicken. Turn out on to a damp marble slab and when it is cool enough to handle work in the cochineal; keep turning into the centre with a palette knife until it becomes firm and opaque. Knead until the colour is even, then form into the shape of mice or press into mouse-shaped jelly moulds and turn out after a few minutes. Mould the ears separately and press into place. Work the cocoa powder into a small amount of fondant to colour brown and press on tiny balls for the eyes. Cut 3 inch lengths of string and press into the fondant for the tails.
