Fruit Fondants


  • 1 lb. icing sugar
  • 2 egg whites
  • 1 tablespoon strained lemon juice
  • chopped nuts, glacé cherries, dates, crystallized fruit, etc., to decorate


Sieve the icing sugar, and mix in a basin with the egg whites, lemon juice and almond essence. The mixture will form a stiff dough. Beat until the mixture is really smooth. Roll out and form into squares, crescents, rounds, ovals etc. Press a piece of chopped fruit or nut firmly into the top of each.
