Crystallized Tomatoes

Ingredients

  • large tomatoes
  • ¾ lb. sugar
  • 1 pint water
  • extra sugar for finishing

Method

Wash the tomatoes and cut four small slits near the bottom of each without breaking them. Squeeze out as many of the seeds as possible. Make a thick syrup by boiling the sugar with the water, stirring until the sugar has dissolved. When the syrup has thickened, add the tomatoes carefully and boil for about 3 minutes. Remove from the syrup, roll tomatoes in sugar and put on an oiled dish in the sun to dry.
