Make the dough as for the oil bread.
Sprinkle flour on a work surface and turn the wet dough out onto this. Leave to prove for a little longer (half an hour or longer – it’s not going to spoil). Cut the blob of dough into small rectangles, and roll each in your hands with more flour to make bread rolls. Or, if you like, shape the bread into ciabatta loaves, or roll it into whatever size
