Ingredients

  • 500 g flour
  • 5 ml salt
  • 4-5 eggs

Method

Sift the flour and salt together. Put the flour on a work surface, make a well in the centre and break the eggs into this (don’t let any pieces of shell go in). Mix the egg into the flour with your hands, starting at the centre and gradually widening the well as you gather more flour. When the dough is properly mixed and has a smooth, silky texture, roll it into sheets, cut to size and work thr
