This is a mission to make and the chances are you’ll mess it up the first time. But it is extremely rewarding when you get it right, and has a rich and luxurious taste that is better than any shop-bought pastry.

Sift the flour into a circle on your work surface. Make a well in the middle of the flour and put in the salt, 60
