  • 400 ml olive oil
  • 60 ml balsamic vinegar
  • 2 tablespoons


Mix the vinegar, sugar, salt and pepper, and whisk until the sugar is dissolved. It is important to dissolve the sugar properly at this stage because once the oil is added it will not dissolve as quickly. Stir in the oil. Wash and finely chop all the herbs and add to the mixture. Don’t stir this too vigorously as it is good to see the separate parts and colours of the dressing when you serve it
