Fruit fritters were very much part of my childhood, but this is an adult version! Beer batter works wonderfully because it utilises the natural yeast of the beer. I recommend Belgian cherry beer – there is a type called Guesze Lambic that is made by Trappist monks. Lethal stuff, but not the way it’s used here. I created this recipe because cherries, apples and beer all work so well together.
