  • 800 g very ripe, red strawberries
  • 150 ml sugar syrup (see BASICS)

Clean the strawberries and liquidise in a blender with the sugar syrup and orange juice until you have a red, pulpy liquid. Divide this between the glasses. Whip the cream until it is slightly firm (the same pouring consistency you would have for Irish coffee). Whisk the icing sugar into the cream as it is becoming firm, just to slightly sweeten it.
