Courgette flowers are delicate and wilt quickly, so you need to stuff them not more than five hours after they have been picked. Either pick your own, at the stage when the flower is full and the baby courgette has begun to form at the base, or find a greengrocer who will organise to have them freshly picked for you.

Do NOT wash the flowers or the dish will be a disaster. Simply brush out any ants or bugs, then put your finger inside the flower and snap off the pistil attached to th
