I like to keep a small jar of Provençal seasoning salt French sea salt spiked with a mixture of equal amounts of dried thyme and rosemary, cracked pepper, cayenne pepper and finely crumbled bay leaf – to give added flavour to grills of poultry, veal, pork, lamb and even oven-grilled potatoes.

Ingredients

  • ¼ teaspoon dried thyme
  • 2 bay leaves, crumbled finely
  • ¼ teaspoon

Method

Pound all the ingredients except the sea salt in a mortar to a fine powder. Pass through a fine sieve. Add the sea salt and pass through a fine sieve again. Keep in a tightly closed jar to use as required.
