For this elegant recipe you will need four fresh figs, four fig leaves and a small marrow bone or two. Fillets of sea bass, red mullet or even salmon can be substituted for the John Dory if desired. On one occasion, when no fig leaves were available, I substituted dried lotus leaves (available in Chinese supermarkets and oriental stores) to fine effect. Failing either of these, squares of aluminium foil can be used, but in this case it is necessary to add a pinch or two of dried herbes d
