This attractive group of quickly-made Provençal appetizers is based on a series of star or flower shapes made by cutting tomatoes into 6–8 wedges and opening them up. These are then used as bases for a variety of salads made from left-over cooked rice, lentils, tuna fish or black olives and diced orange, moistened with a garlic and herb dressing.
