This salad is memorable when cooked in the embers of a brushwood fire in the open air (or even on a backyard barbecue) with herbs.

If you are preparing the salad on a gas or electric grill, slice the vegetables before cooking; brush them with olive oil and cook on both sides until the vegetable slices are tender and well coloured.
