  • 900 g/2 lb small new potatoes
  • 2 tablespoons butter

Method

Wash the potatoes well but do not peel them.

In a large saucepan of boiling salted water, cook the potatoes until just tender, about 15 minutes. Drain and cool. Quarter the potatoes and set them aside.

When ready to cook the potatoes, melt the butter and olive oil in a large frying pan; add the quartered potatoes and cook over a medium heat for 5 minutes, stirring frequently. Th
