Ingredients

  • 1 litre/ pints water
  • olive oil
  • 1 tablespoon

Method

In a large saucepan, combine the water, 2 tablespoons of olive oil and salt. Bring to the boil. Then sift the chick-pea flour into the water gradually, stirring all the time.

Continue to cook, stirring, for 20 minutes, or until the mixture is thick and bubbling. Then pour it into small cake tins or deep saucers which you have brushed with a little olive oil. Cool until ready to use.
