Pan bagnat is one of the most famous mid-morning snacks of the Midi. Literally translated, the name means ‘soaked bread’ or ‘bread in a bath’ but why translate it when the Provençal name is so appealing? Pan bagnat is nothing more nor less than a salade niçoise caught practically between two thick portions of round country bread, so that it can be transported to work or school - for this celebrated salad-cum-sandwich is sold on every street corner.

Originally
