Carrot Mousse with a Sauce of Clams

This will be the third book this recipe has now appeared in — that is three that I recall, it may be more! It was originally in the first edition of A Feast of Fish and now it is in this edition; between times it also appeared as one of my dishes in Kit Chapman’s book, Great British Chefs. I liked it first time around and still think it worthy of inclusion.
