Grilled Herrings with a Hazelnut Crust, Roast Apple and Horseradish Cream

My good friend Shaun, from whom this recipe came, has always been a lover of, shall we say, the more ordinary or cheaper foods, seeing in them merits that others would blindly pass by. I told him there were to be some recipes for herring in this book (there were none in the last one!) and he supplied me with this one. When I test-cooked the other two herring recipes he sampled them and, I believe, pronounced that they were okay!
