We have all come across salad niçoise, a traditional Italian dish normally made with tuna. This is more or less the same only it uses salmon, pesto and yoghurt dressing. It is a great way of using trimmings of salmon or any salmon left over from a fish that has been cooked whole. It makes a great starter or a light lunch dish for a summer’s day eaten with a loaf of warm and crisp ciabatta — what could be better?
