Carpaccio of Trout

As a trout fisherman, I am constantly devising new ways to serve the catch of the day. This recipe came about when we had friends around for dinner one evening. I had absolutely no idea what I was going to serve them as a first course but as luck would have it I managed to catch a fair few of these little beauties the day before so this is what I made.
