Seared Tuna with Pak Choi

I am never sure how to spell pak choi — there seem to be so many ways, even the producers do not agree on its spelling, so there is no hope for me! Once only used by the Chinese in stir-fries and Chinese greens it has now become very fashionable although it can sometimes be hard to find. If you do have difficulty, try your nearest Chinese supermarket.
