Ingredients

  • 2 (-pound) live lobster, or 2 cups cubed cooked lobster meat

Method

  1. If live lobster are used, drop them into enough vigorously boiling salted water to cover. Put a lid on. Cook 10 minutes and remove from the heat. Let stand covered about 15 minutes. Drain and let cool.
  2. When the lobster are cool enough to handle, crack them and remove the meat from the claws and tail. Reserve and set aside any red coral. There should be about
