  1. Melt 3 teaspoons butter in a very small saucepan and add the flour, stirring with a wire whisk. Add the milk, stirring rapidly with the whisk. When blended and smooth, the sauce should be quite thick. Remove from the heat.
  2. Chop the ham finely on a flat surface or grind, using the medium blade of a food grinder or food processor.
  3. Press the sauerkraut to e
