Enough Batter to Coat 50 Strips of Fish Fillets or
- 1 cup flour
- ¼ teaspoon grated nutmeg
- ⅛ teaspoon cayenne pepper
- 2 eggs, separated
- Salt and freshly ground pepper
- ⅔ cup milk
- Place the flour, nutmeg, and pepper in a mixing bowl and make a well in the center. Add egg yolks, salt, and pepper and stir with a fork. Gradually add the milk, stirring.
- Beat the whites until stiff and fold them into the batter mixture.
