  • cups rice, cooked in chicken broth rather than water (see recipe for Perfect Rice)
  • 3 pounds well-scrubbed mussels<

Method

  1. Prepare the rice.
  2. Meanwhile, scrub the mussels well to remove all exterior sand and dirt. Place the mussels in a kettle and add the 2 tablespoons chopped onion, 1 tablespoon
