  1. Remove the mussels from the shells. Dredge the mussels lightly in flour and shake off excess. Dip the mussels in beaten egg and then roll each mussel in bread crumbs.
  2. Heat the fat to 375 degrees. If you do not have a deep-fat thermometer, drop a 1-inch cube of white bread
