Ingredients

  • 1 small head Chinese cabbage (bok choy)
  • 2 ounces bean thread (sometimes called Chinese vermicelli or cellophane noodles)
  • Shrimp balls

Method

  1. Trim off and discard the root end of the Chinese cabbage. Cut the leaves into 3-inch pieces. Drop into boiling water to cover and cook about 8 minutes. Remove the pieces but reserve the liquid for cooking bean thread. Set cabbage aside.
