Ingredients

  • 32 fresh, white mushrooms
  • Flour for dredging
  • Salt and freshly ground pepper
  • 2 eggs

Method

  1. Trim off tips of mushroom stems, but leave the stems on. Rinse mushrooms under cold running water. Drain but do not dry.
  2. Dredge mushrooms in flour seasoned with salt and pepper.
  3. Beat the eggs with water and oil and place in a pie plate.
  4. Toss or turn the mushrooms in the egg mixture until completely coated, then coat with bread crumbs. Let stand
