- Flour for dredging
- Salt and freshly ground pepper
- 2 eggs
- Trim off tips of mushroom stems, but leave the stems on. Rinse mushrooms under cold running water. Drain but do not dry.
- Dredge mushrooms in flour seasoned with salt and pepper.
- Beat the eggs with water and oil and place in a pie plate.
- Toss or turn the mushrooms in the egg mixture until completely coated, then coat with bread crumbs. Let stand
