Patricia Lousada’s Italian mother always started her otherwise traditional American Christmas meal with this pasta dish. Lady Lousada says that wonton wrappers from oriental shops work beautifully for stuffed pasta, and ‘they make the whole affair a snip to prepare’. In place of the broth, you could serve them with a little extra grated fresh parmesan and melted butter, or with a light tomato sauce.
