Ingredients

  • 1 cup pitted Niçoise olives
  • 2 anchovy fillets, well rinsed
  • 2 garlic cloves, chopped</

Method

Grind all the ingredients to a fine paste in a blender or food processor. Scrape the paste into a bowl, taste, and adjust the seasoning. Thin with a little more olive oil if you like.
