Mashed potatoes have become a medium for any number of trendy ingredients, but this pairing is classic and mutually beneficial: celery root sweetens the potatoes, while the potatoes render the celery root creamier.
Peel the celery root and cut into ½-inch slices. Peel the potatoes and cut into 2-inch chunks. Put both in a large heavy-bottomed pot and cover with cold water. The celery root and potatoes can stand at room temperature until ready to cook; start cooking about an hour before serving.
Add salt to the water, bring to a boil, and boil the vegetables briskly for 15 to 20 minutes, until the
