  • 6 large globe artichokes, trimmed
  • 60 mL (2 fl oz) lemon juice

Method

To trim the artichokes

Break off or trim the large outer leaves and the stem with a small knife, leaving approximately 8 cm (3 in.) attached to the heart. Use a vegetable peeler to remove the bitter fibre from the outside of the stem, leaving only the tender, pale flesh.
