Place the sugar and water in a heavy-bottomed saucepan and cook, stirring occasionally over a medium heat until the sugar has dissolved and a dark caramel is formed. Take the saucepan off the heat and allow the mixture to cool for 5 minutes, then add the butter. The butter and the caramel will not mix if the caramel is too cold. If this i
