These delectable golden onion tartlets must be served warm. The onion filling can be replaced with a mushroom filling, as described in the Chef’s tip. If short of time, you could use ready-made shortcrust pastry.

Ingredients

Pastry

  • 200 g ( oz) plain flour
  • ¼ teaspoon salt

Method

  1. Butter two 12-hole shallow patty pans or tart trays.
  2. To make the pastry sift together the flour and salt into a large bowl. Using your fingertips, rub in the cubed butter until the flour is evenly coloured and sandy in texture. Make a well in the centre and add the egg yolks and water. Mix well, form into a ball and cover with plastic wrap. Place in the refrige
