An extremely refreshing all-time favourite that is best made with paper-thin slices of Parma ham or prosciutto.

Ingredients

  • 1 small melon
  • 11 slices Parma ham or prosciutto

Method

  1. Cut the melon in half lengthways and, using a spoon, remove the seeds and gently scrape clean. Slice each half into eight wedges.
  2. With a sharp knife, starting at one end of a melon wedge, slice between the flesh and the thick skin of the melon. Cut each piece of peeled melon in half.
  3. Cut each slice of Parma ham or prosciutto into three long strips.
