Tapenade, a simple spread from Provence in France, is made by puréeing black olives, anchovies, capers, olive oil and lemon juice.

Ingredients

  • 2 fillets red mullet or goatfish, about 170 g ( oz), skinned and deboned

Method

  1. Preheat the oven to hot 220°C (425°F/Gas 7). Cut each fish fillet into eight pieces. Place the garlic clove in the olive oil, toss into the fish and leave to marinate for 15 minutes.
