Fruity sambals are a popular pairing for fish, whether made with tart green mango, sweet pineapple or pungent fermented durian. The cool highlands of Bandung are home to many strawberry farms and this enchanting combination - a thin red slurry that makes a good dipping sauce.

Ingredients

  • 100 g ( oz) strawberries, roughly chopped
  • 1 large red chilli, seeded and roughly chopped

Method

Blend all the ingredients together in a blender with a pinch of salt and taste to balance the flavours. Depending on the sweetness of the fruit it may need more sugar or an extra zing of lime juice.
