This is one of those dishes that works just as well for breakfast with fruit as it does as a dinner dessert. I particularly like it with custard apple segments that have been gently poached in coconut milk.

Ingredients

  • 250 g black sticky rice
  • 500 ml water
  • ½ pandanus lea

Method

Rinse the rice under cold running water, place in a saucepan with the water and the pandanus leaf and bring to the boil. Reduce the heat and simmer for about 10 minutes until the rice has absorbed the water. Remove from the heat, cover and leave the rice to steam for about 10 minutes or until cooked. Remove the pandanus leaf.
