Inspired by the classic cocktail of Mexico, this frozen dessert is a parfait, which is more dense than an ice cream because its not churned before freezing. Serve with a shot of really decent reposado (aged) tequila, the same as the one you add to the parfait.

Ingredients

  • 4 egg yolks
  • 75 ml water
  • 225 g cast
