In the past, I have partnered lamb’s tongue with celeriac and horseradish, mustard fruits and also with mustard spaghetti (all delicious combinations), but I just love them with ripe figs, the symbolic fruit of Turkey. Vincotto and fig vinegar are available from specialist food stores. The inspiration for this photo was taken from Karim Rashid’s Morphescape collection of tableware, a modernist interpretation of Istanbul’s Ottoman skyline.
